The Manual of Chivalry is quoted in Dragon Quest, a short story in A Stroke of the Pen which is a compilation of early writings by Terry Pratchett. Not Dragonquest, a book by Anne McCaffrey.

Ralph and his talking donkey set out to rid the kingdom of Grig of a sudden infestation of dragons. On their journey they encounter the Friday Knight in black armour on a fiery black horse. He challenges Ralph to fight him. The black horse thunders towards Ralph and the donkey, and the black knight falls off. Ralph then declares himself the winner. To everyone’s surprise, the donkey then quotes Rule VII/2a from The Manual of Chivalry and the black knight doesn’t get another try.
